Chinese dietary health regulations

Balance through cooking, eating and drinking.
The aim of the course is to introduce the participants to the principles of Chinese Dietary Health Regulation, for use in the clinic and in their own personal lives.

We will be preparing both traditional Chinese dishes, using traditional ingredients, as well as modern western/international dishes, using ingredients that are readily available in Europe.

A basic understanding of Chinese Medicine including differentiation of Zang Fu imbalances etc. is required.

The class includes topics such as:

Balancing Hot and Cold
Balancing diet to protect the spleen
Proportions on the plate; Xu/Shi and Wei/Qi
Recipes for specific imbalances
Yin and Yang in the eating process (Chopsticks etc.).
Change of Qi through processing (raw, steaming, frying, baking, boiling etc.).
Change and synergy (I Ching)
Functions and nature of leafs, flowers, stems, roots, seeds, muscles, intestines etc.


Friday afternoon:

The introduction to herbal medicine will be taught by Wendy Norris. She has more than 20 years of experience in acupuncture and herbal medicine.

The class on tea will be taught by Alexis Kaae. She is tea-enthusiast, and the founder and owner of Simply Tea, and chairman of the board of Danish Tea Association:

Dr. Zhang Hui from Chengdu University of Traditional Chinese Medicine (CDUTCM), one of the four earliest TCM universities in China, will teach us about the effect of the different teas, according to TCM. He has a Master Degree of Clinical Medicine (Oncology) and has been studying with experienced TCM masters and doctors from the Teaching Hospital of CDUTCM, Sichuan Provincial Hospital, West China Hospital of Sichuan University, all top general hospitals in South-west China.

The 3 days on food will be taught by one of Scandinavia’s leading practitioners and teachers within the field and author of the book: “Kinesisk Kostläre”; Peter Torssell (S). He is the headmaster of the Swedish Acupuncture-school “Akupunkturakademin”.
